How many drops are needed to color 100 g of melted chocolate?
Start with 2 to 3 drops of Dusk per 100 g of melted chocolate or cocoa butter, mix well, then add one drop at a time until you reach the desired intensity.
How long does the bottle keep once opened?
When tightly closed and stored away from light and heat, the bottle of Dusk retains its properties for several months. Check the best-before date shown on the label.
How much should I use for a whole batch of whipped ganache?
For a standard whipped ganache, start with a few drops of Dusk stirred into the liquid ganache while warm, before chilling to set, then adjust during whipping if the shade needs to be deepened.
