Layer cake: pans and equipment

Tall pans, cake rings, supports, spatulas, and decorations for assembling smooth, generously filled tiered layer cakes.

Assembling a layer cake and essential equipment

Bake tall cakes, slice them into layers, and fill them using a piping bag (buttercream, whipped ganache) on a sturdy support. Chilling a crumb coat sets the crumbs before the final layer, ensuring a smooth finish.

Equipment: a tall pan (7–10 cm) or an adjustable cake ring, a turntable, angled and straight spatulas, a cake drum as a base, and dowels for tall cakes.

Frosting and finishing

After the crumb coat, apply the final layer and smooth it on a turntable. For a clean finish on buttercream, use a slightly warmed spatula. Finish with a drip, sprinkles, flowers, or a topper according to the theme.
