Frequently asked questions

How does Gracila Gel differ from classic agar-agar?

Both are seaweed-based, but Gracila Gel is positioned as a clean-label alternative that can gel acidic or salty environments more effectively, where agar-agar sometimes loses effectiveness.

Can it be used in an acidic savory preparation such as a gelled vinaigrette?

Yes, its versatility in acidic (lemon, vinegar) and salty (soy sauce) environments makes it a good choice for original aspics or savory jellies.

Why must it be heated to at least 85°C?

This is the temperature required for complete hydration of the seaweed powder: below this temperature, gelification may be incomplete or uneven.
