Usage tips
Assemble the entremet upside down: mousse, frozen insert, biscuit to close, then freeze completely before unmolding. The elongated shape cuts into regular portions following the curve. A velvet flocking or golden mirror glaze especially highlights the lunar profile.
Note: the 1000 ml volume corresponds to an entremet for 6 to 8 servings; size your insert to the inner curve for even slicing.
