FUNCAKES baking soda (E500) is a natural leavening agent that reacts when it comes into contact with an acidic ingredient in the recipe (fermented milk, lemon, cocoa, vinegar, honey) to release carbon dioxide and aerate the batter. It starts working as soon as it is mixed with the acidic liquid, so the mixture must be put in the oven quickly after incorporation to make the most of its leavening effect. Unlike baking powder, it does not contain an integrated acid and must always be combined with an acidic ingredient in the recipe.

Recommended uses

  • Soda bread and scones made with fermented milk (buttermilk)
  • Fluffy pancakes and crêpes combined with an acidic ingredient
  • Soft cookies made with brown sugar or raw sugar
  • Cakes and cocoa-based cakes, naturally acidic
  • Banana bread and carrot cake

Dosage: use approximately 1 teaspoon (5 g) per 250 g of flour, adjusting according to the recipe: 2 to 3 g for pancakes, 5 to 7 g for a cocoa cake, 8 to 10 g for 500 g of flour in soda bread. Never exceed 1% of the flour weight, as this may result in a soapy taste and metallic aftertaste. Store in an airtight container in a dry place away from moisture.

What is the difference between baking soda and baking powder?

Baking soda requires an acidic ingredient in the recipe (fermented milk, lemon, cocoa, vinegar) to release its gas. Baking powder already contains this acid and therefore works with any mixture, even a neutral one.

Can baking soda be replaced with baking powder?

Yes, in a pinch, by using approximately three times the amount of baking powder for the specified amount of baking soda, but the result will be less fluffy, especially in cocoa recipes that need acidity to activate the reaction.

Is food-grade baking soda different from household baking soda?

FUNCAKES baking soda is food-grade sodium bicarbonate and should not be confused with technical-grade bicarbonates sold for household cleaning, which are not guaranteed for culinary use.
