Passion Fruit Flavor Paste 200 g
30% passion fruit pulp concentrate: a fresh, tangy flavor without adding water to your preparations.
Saracino Passion Fruit flavor paste brings the tropical, fresh and slightly tangy taste of the fruit to creams, ganaches, mousses and cake batters. Formulated with 30% passion fruit pulp, it is significantly more concentrated than fresh fruit or purée: just a few grams are enough for a clear result, without adding moisture that would make pastry soggy or destabilize a cream.
Its smooth texture blends evenly, and the flavor holds up well to baking and freezing. Colored with beta-carotene, it also gives light-colored preparations a natural yellow-orange tint.
Key features
Recommended uses
- Sponge cakes, loaf cakes and biscuits: mix into the batter before baking; the flavor remains after baking.
- Buttercream and frosting: add at the end of mixing for cupcake or layer cake topping with fruit flavor and no excess moisture.
- Mousses, bavarois and crémeux: mix into the base before folding in the whipped cream; suitable for freezing.
- Tart and dessert fillings: flavor pastry cream, whipped ganache or curd.
- Ice creams and sorbets: flavor the mixture before churning.
- Fondant and sugar paste: knead in a small amount to flavor coverings or modeling work.
Dosage: start at around 30 to 50 g per kilogram of preparation, taste, then adjust to the desired intensity. Since the paste is sweet and acidic, account for its sugar and acidity content in sensitive recipes such as meringues and buttercreams.
Pairings: passion fruit pairs with white chocolate, mango and coconut for fresh combinations. It also works well in contrast with milk chocolate or caramel.

Frequently asked questions
How does it differ from passion fruit purée?
Purée consists mainly of water and is used in larger quantities, which changes the texture of a batter or cream. The flavor paste, concentrated with 30% pulp and thickened with pectin and agar-agar, delivers the flavor in just a few grams without changing the consistency.
Does the flavor hold up during baking?
Yes. The flavor is preserved in a sponge cake, loaf cake or biscuit after baking, and remains stable after freezing, making it suitable for entremets and inserts.
Does the paste color preparations?
Slightly: beta-carotene (E160a) provides a natural yellow-orange tint, visible in buttercream or a light-colored mousse. For a more intense color, add food coloring.
Which allergens does it contain?
There are no major allergens in the recipe, but it may contain traces of egg, peanuts, soy, milk and tree nuts. Check the label on the purchased jar before use.
