FUNCAKES Invert Sugar Syrup is a blend of glucose and fructose obtained by inverting sucrose. Less prone to crystallization than regular sugar, it gives preparations a more supple texture, provides high moisture-retention capacity to extend freshness, and adds a slight brown color during baking.
