On Mardi Gras, every region of France has its own fritter: bugnes in Lyon, oreillettes in Provence... and merveilles in the southwest. These diamond-shaped pieces of golden dough, soft in the center and crisp around the edges, generously coated in sugar, certainly live up to their name.
Our version flavors the dough with orange blossom water, without alcohol, so young and old alike can help themselves from the pile. The dough takes 20 minutes to prepare, rests for an hour, and frying takes just fifteen minutes. The hardest part will be waiting for them to cool... or not: they are at their best while still warm.
