Kunafa, or knafeh, is one of the jewels of Middle Eastern pastries: fine kadaïf dough strands golden with butter, filled here with a melting pistachio cream, then soaked in an orange blossom-scented syrup. The dessert plays on the irresistible contrast between the golden crisp top and the soft, fragrant center. Carried by the pistachio craze, kunafa has become one of the stars of social media and festive tables. It is served warm, generously sprinkled with crushed pistachios.
