Originating in Viennese cafés, Kaiserschmarrn is the emperor’s thick pancake: a golden batter torn apart with a fork, caramelized in butter and sugar, then dusted with powdered sugar. Here, it’s served with a quick compote of apricots and seasonal strawberries, making it a convivial dessert to share in the center of the table. Not a drop of alcohol: the raisins are simply rehydrated in warm apple juice, and all the fluffiness comes from the egg whites beaten until stiff.
