Kouign-amann is a Breton specialty that originated in Douarnenez in the 19th century. Its name means “butter cake” in Breton: it is a laminated yeasted dough made with a generous amount of butter and sugar, which caramelizes during baking. The result is a pastry that is crisp and caramelized on the outside, and soft and buttery on the inside.
The process involves laminating the dough: butter and sugar are enclosed in a yeasted dough, which is then folded several times to create layers. The sugar melts and caramelizes against the pan, forming the characteristic golden crust.
