Dorayaki is the Japanese sweet made famous by manga: two small, fluffy, golden pancakes, nicely rounded, enclosing a generous layer of sweet red bean paste, anko. Flavored with honey, the paste remains incredibly soft. Easy and quick, dorayaki is eaten by hand, at any time, and lends itself to a thousand delicious variations, from red bean paste to chestnut cream or chocolate.
