Tarte Tropézienne is a cream-filled brioche created in Saint-Tropez in the 1950s by a pastry chef of Polish origin. A soft brioche sprinkled with pearl sugar, cut in half and filled with a smooth cream combining pastry cream and butter. It has become an emblem of southern French pastry-making.
The brioche should be well-risen and soft, and the cream generous yet firm enough to hold its shape. The pearl sugar on top adds the characteristic crunch. Chilling it makes cutting and filling easier.
