The chocolate éclair is a classic of French pastry, made with elongated choux pastry filled with chocolate pastry cream and topped with icing. Originating in the 19th century, its name is said to come from the fact that it can be eaten in a flash. Its success depends on mastering the choux pastry and achieving a smooth cream.
The recipe consists of three stages: the choux pastry, thoroughly dried out and then piped into even logs; the chocolate pastry cream; and the icing. Baking without opening the oven at the beginning ensures that the eclairs rise and remain hollow.
