Its durability is almost infinite: a professional quality stainless steel mold lasts 20 to 30 years with regular use without any degradation. It is completely neutral (does not react with acids), dishwasher safe, does not deform, and guarantees perfect hygiene. Silicone is better for frozen entremets to unmold while keeping complex shapes (impossible with stainless steel), but lasts much less and conducts heat less well. Aluminum is even more conductive but scratches, deforms over time, and some regulations restrict its contact with acidic foods. How to clean a stainless steel mold without scratching it?
Warm soapy water, non-abrasive sponge, immediate drying. Avoid steel wool and abrasive detergents that dull polished stainless steel. All our molds are dishwasher safe, but hand washing better preserves the shine long term. For stubborn burnt residues, soak with warm water + baking soda for 30 minutes before gentle scrubbing. Lime stains are removed with diluted white vinegar.

What size number mold to choose for a number cake?
For 6 to 8 people, choose a 25 cm high mold. For 10 to 15 people, opt for 30 cm. For large events (20 people or more), 35 to 40 cm molds are necessary.
