Ingredients
- •Milk chocolate: 200 g
- •Whole milk: 120 g
- •Gelatin 200 bloom: 4 g
- •Whole liquid cream 30%: 250 g
- •Sponge cake or genoise for the base: 1 strip
- •Milk chocolate for the 3 penguins: 80 g
Steps
- 1.Hydrate the gelatin. Heat the milk, add the drained gelatin, pour over the milk chocolate, smooth out.
- 2.At 30 degrees, fold in the softly whipped cream to obtain a mousse.
- 3.Pour the mousse into the igloo mold, place the biscuit strip at the base, smooth out.
- 4.Freeze overnight, then unmold the igloo while still frozen.
- 5.Flip the mold, pour melted milk chocolate into the penguin cavities, let set in the fridge.
- 6.Decorate the igloo with the 3 penguins, let come to room temperature before serving.
