👨🍳 Preparation Tip :
- Make sure all ingredients are at room temperature.
- For one portion, mix 100 g of the mix with 70 ml of warm tap water for 8 minutes using a whisk at maximum speed until an airy texture is achieved.
- Add 220 grams of unsalted butter (at room temperature) in 4 parts to the mixture, beating until the butter is fully incorporated before adding the next part.
- Beat at high speed for about 8 minutes to obtain a smooth cream.
- One portion of cream is enough to fill and cover a 20 cm cake or decorate about 12 cupcakes.
