Xanthan gum :
Xanthan gum is a naturally occurring gelling agent that can be used as a thickener.
It comes in the form of a fine powder, and does not add any particular taste to dishes. On the other hand, it makes it possible to provide texture and stability to emulsions.
It is also a widely used product in gluten-free cooking.
Xanthan Gum Usage:
You can use this powder to prepare edible glue, chewing gum paste or granulation.
Recipe for preparing edible glue: mix 1/4 teaspoon of gum with 4 tablespoons of water. It takes about 10-20 minutes to dissolve. The glue obtained is clear and colorless.
Recipe for Quick Granulation: Mix 1 tsp gum powder into 100g royal icing. Leave to stand for approximately 1 hour before use.
Recipe for a quick paste: isolate 5 grams of gum powder and 250 grams of sugar paste. Knead in the fondant and ideally leave to rest for 20 to 30 minutes before use.
