Vegan Mousse from Sosa Ingredients is a professional gelling agent of 100% natural origin, made from a blend of agar-agar and tapioca starch. It allows for stable, light vegan mousses without syneresis, while offering a perfect texture even after freezing.

Instructions for use

Add the gelling agent Vegan Mousse to the liquid base of the mousse.

Heat between 90 and 100 °C while stirring.

Let cool to 50 – 60 °C, then gently fold into the aerated mixture.

Mold or pour into a container, then let set in the cold.

Can be frozen without causing syneresis.
