Instructions (professional)

Sift 500 g of powder into a bowl.

Add 75 ml of cooled boiled water.

Mix at low speed for 5 minutes with a mixer (not a blade mixer) or 10 minutes by hand.

The icing is ready when it forms soft peaks.

For cake covering: add 1 teaspoon of glycerine per 500 g of powder.
Storage

Unmixed: keep dry, away from moisture.

Mixed: cover the bowl tightly (double wrap or airtight container), refrigerate, use within 7 days then re-beat before use.
