Instructions for use

Preparation of the base syrup:
Mix Proglaçage with water and sugars. Bring to a boil to activate gelling. -
Cooling:
Pour into an airtight container and let rest at 4–5 °C for 12 h. -
Fruit glaze:
Add fruit puree, heat to 80 °C, then glaze at 35–45 °C. -
Dried fruit or chocolate glaze:
Heat the base to 80 °C, add melted ingredients, emulsify, then glaze at 35–45 °C.
For spray glazing, heat between 70 and 80 °C.
💡 Tip: add 30–35 % sugars and 20–25 % liquid glucose to enhance shine, preservation, and freeze resistance.
