Instructions for use

Mix cold into a fat-free liquid base.

Disperse with vigorous stirring.

For optimal results, use an automatic mixer.

Hydrate the product 24 hours before assembly to improve stability.

In the presence of enzymes (fruit and vegetable pulps), heat the liquid to 70 °C to deactivate them before adding Potatowhip.

Leavening / emulsifying agent: 10 to 40 g/kg (1 to 4%).

Coagulating agent: up to 8%.
