The Professional Protocol for Successful Unmolding

Tempering: The quality of your chocolate is crucial; use perfectly tempered couverture chocolate to make the most of the mold’s glossy surface.

Filling: Fill the cavities, tap firmly to release air bubbles, then level off the excess.

Crystallization: Place in a cool place (10-12°C). The chocolate will slightly shrink from the rigid Tritan, making it easier to release the pieces.

Unmolding: Turn the mold over and tap sharply; your pralines will come away without leaving marks.
Patissland Expert Tip: This mold is the ideal base for colorful creations. Use colored cocoa butters directly in the mold before pouring to create marbled or spotted effects that will remain perfectly shiny thanks to the Tritan finish.
