What are the best finishes for this mold? The design of the Honoré mold lends itself beautifully to mirror glazing to highlight its shiny curves, or to velvet spray for a very contemporary matte and powdered effect. For a classic Saint-Honoré effect, you can also pipe diplomat cream or whipped cream directly into the central hollow after unmolding.
Can you bake a cake directly in the mold? Yes, absolutely. You can bake a sponge cake, Madeira cake, or loaf cake directly inside. However, to fully enjoy the "3Design" rounded edge, we recommend using this mold for entremets made of mousses or creams that will be frozen before unmolding.
How to avoid air bubbles when filling? To ensure the pattern is perfectly sharp, start by pouring a small amount of mousse at the bottom of the mold and carefully coat the walls with an angled spatula or the back of a spoon. Gently tap the mold on your work surface before finishing filling it to release any residual air bubbles.
