Place the mold flat on a cold tray.

Pour the mousse/insert in layers, tap to release air.

Unmold very cold, then glaze (mirror 30–35 °C) or spray velvet (chocolate/cocoa butter 45–50 °C).

Defrost in the refrigerator 6–8 h on a rack.
