Quantities and instructions

  • Light mousse: 3 sheets for 500 ml
  • Mirror glaze: 4 to 5 sheets for 500 ml
  • Panna cotta: 2 to 3 sheets for 500 ml
  • Bavarois and layered desserts: 4 sheets for 500 ml
  • Soak in cold water for 5 to 10 minutes, squeeze out the excess water, then dissolve in a hot liquid at 45-60 °C (do not exceed 80 °C) before setting in the fridge for 12 to 24h
