The success of the velvet effect relies on precise thermal shock. Follow these factual steps:

Core Freezing: Your dessert must be taken out of the freezer at -18°C minimum just before application.

Spray Temperature: For smooth spraying, the bottle should be at room temperature between 20°C and 25°C. If necessary, gently warm the bottom of the spray in warm water (max 30°C).

Application: Shake vigorously. Spray from a distance of 25 to 30 cm with steady movements. Apply in thin successive layers to avoid drips.
