Achieving a regular velvet finish relies on strict respect of the thermal shock:

Preparation of the entremet: Your creation must be imperatively frozen through (take it out of the freezer at the last second).

Preparation of the spray: The cocoa butter inside must be completely liquid. If necessary, gently warm the can in a temperate room or by dipping the bottom of the bottle in warm water (max 30°C).

Application: Shake vigorously. Spray from a distance of 25 to 30 cm using smooth and constant movements.

Nozzle maintenance: After use, turn the can upside down and spray briefly "head down" to empty the valve and prevent the cocoa butter from solidifying in the mechanism.
