Powder food coloring for baking
Powder food colorings for dry dusting, painting, or coloring meringues and macarons without adding moisture.
Uses for the powder
Three uses: dry, applied with a brush for a velvety or metallic sheen; diluted in a little food-grade alcohol to paint details; or mixed into meringue or a macaron batter without adding water, so the texture is not affected.
Water- or fat-soluble powder
As with all food colorings, the rule depends on the medium: use an oil-soluble powder on a fat-based medium (chocolate, cocoa butter), and a water-soluble powder on a water-based medium. Metallic powders are generally applied dry to a dry surface.
