Flower paste and modeling paste
Edible modeling pastes, flower paste, and sculpting pastes, with the right tools: the materials for figurines, sugar flowers, and fine decorations.
Modeling paste or flower paste
Modeling paste is pliable, stays workable for a long time, and holds detail: figurines, characters, and shapes. Flower paste (gum paste) rolls out very thin and dries hard: petals, realistic flowers, rigid lace. Sculpting pastes in large packs are suitable for large pieces and busts. All can be colored throughout with gel food coloring.
Working with the paste
Always knead the paste before use to warm and soften it. Work with small quantities, keeping the rest wrapped in plastic wrap: these pastes crust over quickly in the air. Thin pieces dry in a few hours, while thick figurines need 24 to 48 hours. Assemble the pieces with edible glue and refine the details with modeling tools.
Frequently asked questions
Can flower paste be replaced with fondant?
Not for thin petals: fondant remains soft and tears. A 50/50 mix of fondant and flower paste offers a good compromise for intermediate decorations.
Can the figurines be stored?
Yes, for several weeks when kept away from moisture and light. Never store them in the refrigerator, as condensation will soften them.
Does hardened paste remain edible?
Yes, all these products are edible; even when dry, the piece can be eaten.
