With 200 Bloom, you use less product for the same firmness compared with 150 Bloom gelatin. Finer mouthfeel, less rubbery texture, and better preservation of delicate flavours (vanilla, red berries, white chocolate).

Instructions — 4 steps
- Hydration: soak the sheets in a large volume of very cold water (5–10°C) for 5 to 10 minutes. Cold water prevents premature dissolution — an absolute rule.
- Pressing: press the sheets firmly to extract excess water. A properly hydrated sheet weighs 6–7 g (vs. 1.66 g when dry). Crucial step: excess water dilutes your preparation.
- Dissolving: incorporate into a hot liquid at 45–60°C minimum. Mix until completely dissolved. Do not exceed 80°C after adding it — its gelling power deteriorates.
- Setting in the cold: refrigerate at 4°C. Stable structure after 12–24 hours. For complex pieces, a full night is recommended.

Frequently asked questions
How many sheets for 500 ml?
Classic mousse: 3 sheets. Mirror glaze: 4–5 sheets. Marshmallow: 8–10 sheets. Adjust according to the desired firmness and the acidity of the liquid (acidic liquids require slightly more).
Why use very cold water for hydration?
Cold water (5–10°C) prevents the gelatin from dissolving in the soaking water. If the water is lukewarm, you lose gelling power. Rule: cold water for hydration, hot liquid for dissolving.
At what temperature should it be dissolved?
Ideally 45–60°C, with 35°C as the minimum. Never boil after adding it — above 80°C, its gelling power deteriorates. If your preparation has boiled, let it cool before incorporating the gelatin.
Can it be replaced with agar-agar?
Not for mousses, panna cotta, and mirror glazes — agar-agar produces a firm, brittle texture that is very different. Use agar-agar only for simple jellies or specific vegan recipes.
