Its thermoreversible structure and its great ability to simulate fat in the mouth make it ideal for creating creamy and melting textures, while improving the stability of preparations during freezing and thawing.

Instructions for use

Add to a liquid while stirring vigorously

Heat to 50–70 °C for good dispersion

Do not exceed 70 °C (risk of degradation)

Let rest 2 h at 5 °C for complete hydration

Can be frozen / thermoreversible at 35–40 °C
