The Alginate – 750 g from Sosa Ingredients is a natural powdered gelling agent based on sodium alginate (E401), of plant origin. This ingredient is essential in molecular cuisine for making direct and reverse spherifications, offering liquid beads or pearls with a melting core.
It is used cold with all aqueous liquids whose pH is above 4 and containing more than 80% water. It is also possible to use it as a thickener in certain preparations.

Instructions for use

Direct spherification: Mix the Alginate with the desired liquid (pH >4). Pour in drops into a chloride bath. Leave for a few seconds, rinse with water, and serve.

Reverse spherification: Incorporate the Alginate into a mineral water bath and dip preparations containing calcium.
💡 Technical advice: avoid fatty or highly alcoholic environments, which can alter gelling.

Storage
