Uses
- Chilled entremets: assemble upside down, add the insert, mousse, and biscuit, freeze, then unmold
- Charlotte: line with ladyfingers, fill with bavarian cream, and chill to set
- Baked cheesecake: line the ring, bake directly, and remove the ring once cooled
- Tall sponge cake for a layer cake, or a biscuit to cut with the ring

What's the difference compared with the H4.5 cm ring?
The H6 cm ring allows for three-layer assemblies with an insert (charlotte, tall cheesecake, thick sponge cake). The H4.5 cm ring is suitable for thin entremets and more contemporary sizes.
How can I remove the ring without damaging the entremets?
The entremets must be completely frozen. Run a blowtorch over the outer sides for a few seconds, or use a warm, damp cloth, then lift the ring straight up.
Dishwasher safe?
Hand washing is recommended to preserve the stainless steel's shine; dry immediately to prevent limescale marks.
