All About ProGel Lilac (Tips & Tricks)

How to achieve a pastel "lavender" tone with this coloring? Lilac is a very sensitive color depending on the base used. For a pastel result, start by coloring a small amount of white fondant, then incorporate this colored fondant into a larger white mass. This allows the color to dilute much more evenly and avoids accidental overdosing.

Why does my Lilac color change shade in the light? Purple and lilac pigments (E122/E133) are among the most sensitive to UV rays. If you expose your cake directly behind a sunny display window, the color may fade. We recommend storing your finished creations in an opaque cake box until presentation time.

Can ProGel Lilac be used in white chocolate? Since ProGel is water-based (hydrosoluble), it is not recommended for coloring large quantities of pure chocolate, as it may cause the mass to seize. For chocolate, prefer our fat-soluble colorants (like Colour Mill). However, for small details or a cream-rich ganache, ProGel Lilac can be used with caution.
