  • Sensory Profile: A bold chocolate attack followed by a unique malty sweetness. Its creamy texture results from a rigorous blend of cocoa beans and whole milk (23%).

  • Culinary Performance: Thanks to its balanced fluidity (3 drops), it is exceptional for making milk mousses, whipped ganaches, gourmet bars, or fine coatings.

  • Exceptional Ingredients: Use of brown sugar and barley malt extract for a deep flavor signature and a less sweet perception than ordinary milk chocolates.

Tempering Guide for a Professional Finish

To achieve perfect shine and effortless unmolding, follow the specific temperature curve for Jivara:

  1. Melting: 45 - 48°C

  2. Crystallization (Cooling): 27 - 28°C

  3. Working: 29 - 30°C

Packaging and Patissland Logistics

We offer Jivara in several formats adapted to your consumption:

  • 250g and 1kg: Carefully repackaged in airtight bags to guarantee the freshness of the cocoa butter.

  • 3kg: Original Valrhona bag.

  • Logistics Delay: For the 12kg format, a preparation time of 48h is required before shipping.

Important Note (Summer Transport): Chocolate may slightly melt in case of high heat during transport. This does not affect its technical qualities or flavors after reworking.

Composition and Allergens

  • Ingredients: Cocoa butter, whole MILK powder, sugar, cocoa beans, brown sugar, natural vanilla extract, emulsifier (soy lecithin), barley malt extract. Cocoa: minimum 40%.

  • Allergens: Contains soy, milk, and barley (gluten). May contain traces of tree nuts.

  • Storage: Store in a cool, dry place (16-18°C) to preserve the malty notes.
