Sosa konjac gum, derived from the root of Amorphophallus konjac, is a 100% natural thickening, stabilizing, and gelling agent. Its high water absorption capacity allows it to form soft, stable gels even at low doses, on its own or in synergy with other texturizing agents.

Use
Mix the powder with the dry ingredients, pour into cold water while stirring vigorously, then heat to 75-80 °C until fully dissolved (never pour liquid directly onto the powder). Used on its own, it forms thermoirreversible gels; in synergy with kappa gum, it becomes thermoreversible.

How do you use konjac gum?

Can konjac gum be combined with other gelling agents?
Yes, in synergy with xanthan gum, kappa gum, or a starch, to adjust the elasticity, viscosity, or thermoreversibility of the resulting gel.
Is konjac gum thermoreversible?
On its own, no: the gel remains stable when heated. In synergy with kappa gum, it becomes thermoreversible.
