Sosa Locust Bean Gum 650 g
Natural thickener and stabilizer extracted from locust bean seeds.
Sosa locust bean gum is extracted entirely from the seeds of the locust bean tree (Ceratonia siliqua). This natural thickener is suitable for liquid preparations high in water or fat, such as ice creams, sauces, soups, cheeses, and cake batters. It works both hot and cold, performing better when heated, and is highly resistant to acidic environments.

- E410
- Dosage
- 5 to 10 g/kg
- Best performance
- 60-80 °C
Use
Mix into an aqueous liquid, cold or hot, with vigorous stirring; it works best between 60 and 80 °C. It is non-thermoreversible and freezer-stable. In pastry making, it strengthens the structure and improves the slicing of sponge cakes and biscuits while reducing the amount of egg needed, and works synergistically with other gelling agents such as agar-agar or gelatin.
For a versatile thickener that works both hot and cold, also see Sosa guar gum.
