Instructions (clean result in 6 steps)

Roll out your puff pastry (or sweet/sandy dough) and lightly grease the frame.

Line the inside of the frame with dough, letting it extend 1–2 mm above.

Place the stainless steel insert in the center to form the cavity (you can lightly oil the insert).

Chill for 15–20 min (better corner hold).
-
Bake on a micro-perforated tray. For puff pastry, light weight on the insert = even rising.

Remove the frame while hot (with glove), remove the insert, dry 3–5 min if needed, then fill.
Pro tip: spray a light coat of cocoa butter or brush a light syrup to waterproof the walls before filling.

Does the kit work without puff pastry?
Yes, it works very well with sweet/sandy dough, leavened dough, or puff brioche.
Should the dough be pricked?
Puff pastry: no (or very lightly). Sweet/sandy dough: yes, to limit blistering.
Can I use a release spray?
Yes, in a very light coat on the insert and frame.
Why two different heights (69 mm vs 60 mm)?
The frame (69 mm) provides structure and protects the rise; the insert (60 mm) creates the clean cavity with an ideal technical clearance.
