Sosa Proespuma Cold is a powdered foaming agent that lets you create light, airy preparations with perfect stability when cold. It can be used to make espumas, foams, or cold airs with a siphon from a variety of liquids, with a firm, uniform, long-lasting texture, even after freezing. It differs from Proespuma Hot, which is designed for hot service in a bain-marie.

Proespuma Cold is formulated for cold stability and freezing. Proespuma Hot is designed for serving in a bain-marie at up to 65 °C.
