Frequently asked questions
Your questions, our advice
Why does this gum produce a more rigid gel than gellan gum?
Kappa carrageenan forms a more brittle, rigid network than gellan gum, creating clean-cut textures that are especially desirable in fruit pâte de fruit or confectionery inclusions.
Should Kappa Gum be used cold or hot?
Hot preparation only: the gelling agent must be dissolved in a heated liquid to activate properly; it then sets as it cools.
Can the gel be frozen?
No. Unlike gellan gum, Kappa Gum is not recommended for preparations intended to be frozen.
