Gluconolactat - 500 g
Calcium gluconate and lactate for successful reverse spherification.
Sosa Gluconolactat is a blend of calcium gluconate and calcium lactate designed to enrich calcium-deficient preparations before immersing them in an alginate bath for reverse spherification. It ensures homogeneous, stable gelation on contact with the bath.

Frequently asked questions
Your questions, our advice
Why use Gluconolactat rather than calcium chloride?
Calcium chloride can leave a slight bitter taste in the sphered liquid. Gluconolactat, with its neutral taste, is preferred for enriching the inside of a preparation with calcium before immersing it in an alginate bath for reverse spherification.
Can it be used hot and cold?
Yes, it disperses equally well in hot or cold bases, making it easy to incorporate into prepared juices, purées, or sauces.
Is the result thermoreversible?
No, unlike alginate, the structure formed with Gluconolactat is not thermoreversible once spherification is complete.
