Frequently asked questions
Your questions, our advice
Why is the recommended amount so high compared with other concentrated pastes?
Dulce de leche is a caramel made with milk in its own right, not just a flavoring: use it like a base ingredient, at 200-300 g per kilo, to add both flavor and texture.
Can it be used as a caramel glaze?
Yes, loosened with a little warm cream, it makes a smooth caramel topping.
Should the paste be warmed before use?
It’s not essential, but gently warming it in a double boiler makes it easier to incorporate into a cold mixture.
