Skillet Cookie with Marshmallows
Original FunCakes recipe
What is a skillet cookie? A skillet cookie is a large American cookie baked in a skillet or an ovenproof dish, which gives it crispy edges and a soft center. It tastes as good as it looks and is perfect for sharing with family or friends. Even better, it's the ideal homemade treat to prepare for Father's Day.

Steps
-
Preheat the oven to 200 °C (convection oven 180 °C).
-
Mix 400 g FunCakes Brownie Cake Mix with 125 g butter and 1 egg in a bowl until you get a firm dough. Fold in 100 g FunCakes White Chocolate Chips at the end.
-
Spray the skillet with baking spray. Cover the bottom and sides of the skillet with half of the dough.
-
Warm the FunCakes Ready-to-Use Dark Chocolate Ganache slightly in the microwave to make it easier to scoop from the jar. Fill the skillet with the ganache (about 2/3 of the jar).
-
Roll out the remaining dough between two sheets of parchment paper into a circle. Place it over the ganache and seal the edges together.
-
Bake the cookie for about 25-30 minutes in the preheated oven. Check after 25 minutes to prevent it from browning too much. The top should remain slightly soft to the touch. During the last few minutes of baking, generously add BBQ marshmallows on top of the cookie. Let them melt in the oven. Tip! If you want the marshmallows to become slightly golden, place the skillet briefly under a hot grill or use a kitchen torch.
-
Serve the cookie directly in the skillet and share it. Extra delicious with a scoop of vanilla ice cream. Warning! The skillet is very hot and stays hot for a long time. Because of this, the cookie will continue to cook a bit after removing it from the oven.
