Steps
-
Prepare the rainbow two days in advance so it can dry well. Knead the red, orange, yellow, green, blue, purple, and lilac fondants thoroughly, then roll them out into even strips. To measure the correct size, you can use the bottom of the 15 cm cake tin. Place the tin on a sheet of baking paper and trace around it. Arrange your fondant strips along this line. Stick them together with a little edible glue. Let dry for two days.
-
Preheat the oven to 180°C (160°C for fan oven).
-
Prepare 400 grams of FunCakes Sponge Mix according to the package instructions. Grease the tin using release spray and divide the sponge batter between the two tins. Bake the cakes for 30 to 35 minutes, immediately turn them out onto a cooling rack after baking, then allow to cool.
-
Prepare 200 grams of FunCakes Buttercream Mix according to the package instructions and add a flavor paste if desired. Cut each sponge in half using the cake leveler and fill with buttercream. Stack the layers on top of each other. Spread a thin layer of buttercream outside the cake to fill holes and smooth out bumps. Refrigerate for 30 minutes, then apply a second coat of buttercream. Use the spatula to smooth the edges.
-
Cut the cake board to the size of the smaller cake, place the cake on it, and leave both cakes in the fridge for one hour to firm up the buttercream. Then, cover the cakes with nonpareils by gently pressing them by hand onto the cake. Stack the cakes on top of each other using the bamboo skewers.
-
Knead the pink fondant again and roll it out into a thin strip. Cut two rectangular pieces of the same size and one smaller, narrower piece. Fold the sides of the two rectangular pieces together and stick them with a little edible glue. Make a fold along the glued side. Place the narrow rectangular strip upside down on the table and lay the two loops on top. Wrap the narrow strip around the loops and fix it with a bit of glue. Attach this bow to the small cake’s strip.
-
Insert two skewers into the top of the cake and place the rainbow just in front so it can rest against the skewers; fix it with a little glue and a piece of fondant. Roll out the white fondant and cut out clouds. Place them in front of the rainbow. Keep the cake refrigerated until use.
