Steps

  1. Prepare the rainbow and cloud decorations two days in advance to let them dry properly. Reserve 600 g of white sugar paste to cover the middle cake, color the remaining 600 g with the various gel colors. Roll out a piece of white sugar paste to about 2 mm thick and cut out some clouds. For the rainbow, knead the red, orange, yellow, green, blue, purple, and lilac sugar pastes well, then roll out regular strips. To measure the right size, you can use the 15 cm mold base. Place the mold on a baking paper sheet and trace around it. Arrange your sugar paste strips along this line. Stick them together with a bit of edible glue. Let dry for two days.

  2. Preheat the oven to 180 °C (convection oven 160 °C).

  3. For the cake, prepare 400 g of FunCakes sponge mix according to the package instructions. Grease the 25 cm mold with Bake Release Spray and pour the sponge batter into the 25 cm mold. Bake the cake for 40-45 minutes, unmold immediately onto a cooling rack and let cool.

  4. Grease the other two molds with bake release spray and prepare the remaining 400 g of FunCakes sponge mix according to the package instructions. Divide the batter over the two molds. Bake the cakes for 30 to 35 minutes, unmold immediately after baking onto a rack and let cool.

  5. Roll out all the colored sugar paste to about 1-2 mm thickness and cut out squares. Place them between two sheets of cling film so they stay flexible. Meanwhile, prepare 400 g of FunCakes buttercream mix according to the package instructions and add lemon meringue flavoring paste to taste.

  6. Cut the sponges in half using the leveler and fill and cover them with buttercream. Cut the cake board to the size of the smallest cake, place the cake on it and refrigerate the cakes for one hour to firm the buttercream.

  7. Cover the middle sponge with white sugar paste. Then color the rest orange. Cover the top of the bottom sponge with a piece of orange sugar paste and trim the excess. Now stick all the colored squares you created onto the sides of the bottom cake.

  8. Push 4 support rods into the bottom cake and cut to size. Spread a bit of decorating gel along the lower edge of the middle cake with the brush and press the Discomix onto it. Place this cake (with its board) on the bottom cake, then push 4 rods into this cake and cut them to size. Then cover the smallest cake with Discomix by gently pressing the nonpareils by hand against the cake, and place it on top of the other cakes. Tip! 9. Melt the chocolate decorations in the microwave at 450 W, stirring occasionally. When almost melted, take them out of the microwave and mix the last pieces well into the warm chocolate. Let cool slightly. Put the melted chocolate into a piping bag, cut a small opening and let the different colors drip down the edge of the middle cake.

  10. Insert two skewers into the top of the cake and place the rainbow just in front so it can lean against the skewers, secure it with a bit of edible glue and a piece of sugar paste. Place the clouds in front of the rainbow. Keep the cake in the refrigerator until use.
