Steps

  1. Preheat the oven to 180 °C (convection oven 160 °C).

  2. Prepare 500 g FunCakes cookie mix according to the packet instructions. Let the dough cool in the refrigerator for at least 1 hour.

  3. Prepare 100 g FunCakes pastry cream mix according to the packet instructions and let it rest.

  4. Roll out the chilled cookie dough on a floured surface. Take a mold of your choice and use it to cut out the dough. Grease the mold and place the dough inside. Are you working with a baking ring? Then cut the dough directly on the greased mold or covered with parchment paper.

  5. Prepare 600 g FunCakes cupcake mix according to the packet instructions. Apply a thin layer of apricot jam on the cookie dough with a brush or spatula. Then, spread a layer of cupcake batter about 3 cm thick over the dough. Spread it evenly with a spatula/scraper.

  6. Then put the pastry cream into a piping bag and make diagonal stripes over the cake. Finally, sprinkle the pecan nuts on top and bake in the oven for about 35-40 minutes until nicely golden. Baking time also depends on the thickness of the cupcake batter and the size of the mold. Tip: Are you using a 24 cm round quiche mold? Then halve the above ingredients.
