Steps

  1. Preheat the oven to 180°C (160°C fan) and grease the pan with Baking Spray.

  2. Prepare 500 g of FunCakes Deluxe Sponge Cake Mix as indicated on the package in two separate batters. Color each batter with the food coloring gels. Bake the sponges for 30-35 minutes, then immediately unmold onto a cooling rack to cool completely.

  3. Prepare 150 g of FunCakes Enchantée® Cream Mix as indicated on the package and flavor it with FunCakes Lemon Flavor (oil-based).

  4. Divide the cream into two portions and color them yellow and pink with the food coloring gels. Put the cream into two piping bags fitted with the No. 1M tip.

  5. Use a cake leveler to cut each sponge into three layers and cut out circles with the round cutter. Place an acetate strip inside the cutter and secure it.

  6. Place an acetate strip inside the cutter and fix it with a small piece of adhesive tape. Place a cake circle at the bottom and pipe a layer of colored cream on top. Repeat with a cake circle of the other color, alternating until you have three sponge layers and three cream layers. Sprinkle FunCakes Sprinkle Medley Happy Birthday on top.

  7. Carefully remove the cutter, then repeat until you have enough mini cakes.
