Steps
-
Combine 14 g FunCakes meringue powder, 125 g sugar, and 125 ml water in a bowl and whisk at high speed until you get a thick white mixture. Gradually add the remaining 250 g of fine sugar while beating at high speed. Beat for 8 minutes until stiff peaks form, then fold in half a jar of FunCakes Wild Berry flavor paste. TIP! Ensure your bowl and whisk are free of grease!
-
Place the meringue in a piping bag fitted with a #1M tip and pipe a large star onto the parchment paper. Pipe a ring around and against the star, then add another ring on top. Keep the circles about 7 cm wide.
-
Preheat the oven to 120°C (100°C convection oven) and dry the meringues for 1.5 hours. After baking, let them cool in the oven with the door slightly ajar.
-
Prepare 75 g FunCakes Mix for Enchanted Cream® according to the package instructions. Place a generous spoonful of cream on the cooled meringues.
-
Briefly warm some wild berry jam in the microwave until it becomes slightly fluid. Spoon some jam over the cream using a teaspoon. Decorate with fresh fruits and a sprig of rosemary or mint. For a festive finishing touch, sprinkle with FunCakes snow sugar.
