Steps
-
Mix or knead 400 g of FunCakes cupcake mix, 125 g butter, and 1 egg to obtain a dough. Add 5 g of matcha powder to the dough and mix until homogeneous. Finally, fold in the FunCakes white chocolate chips and knead briefly by hand.
-
Place a sheet of cling film on the work surface and put the dough on it. Shape into a roll about 5-6 cm in diameter and freeze for at least 2 hours.
-
Preheat the oven to 200 °C (180 °C for a convection oven) and line a baking tray with parchment paper.
-
Cut slices about 1.5 cm thick and arrange them with enough space between on the baking tray. Bake the cookies for 15 to 18 minutes until done. They will still be soft when coming out of the oven but will firm up while cooling.
-
Prepare 75 g of FunCakes Enchanted Cream® mix according to the instructions on the package. Then, add FunCakes Crunchy White Choconut spread to taste.
-
Place a #1M piping tip in a decorating bag and pipe a generous rosette inside the cookie. Sprinkle chopped pistachios on top. Cover with a second cookie.
